Both will overwrite the restaurant career, but I found that adding a different career PREVENTS that Sim from showing back up in your hiring rotation.
At this point, you can EITHER remove the career or add a different career. Removing the career with them elsewhere results in an error. Open the restaurant to get them on the lot. Hire people in the slots you want to fill, even if they’re not your preferred staff, then get their id#: sims.get_sim_id_by_name. My personal favorite method is using MC Command Center to copy/paste the looks and personality of a Sim onto a randomly generated NPC. You must place them in the world without playing them or give them the career and/or trait and then evict them and don’t play them again. You cannot make a Sim your active household if you want them to keep their NPC career or NPC trait. Credits to for the cheat code and for a list of NPC jobs.
